- 160g Creamcheese
- 20g Unsalted butter
- Hot water
- 50ml Milk
- 40g Cake flour
- 4 Egg yolks
- 4 Egg whites
- 1/4Tsp Lemon juice
- 80g Sugar
- Hot water
- Bake at 160℃ for 20 minutes
(160℃ - 20分焼く)
- Wait for 5 seconds
- Bake at 110℃ for 60 minutes
(110℃ - 60分焼く)
- Honey

  • it is a waste of time to beat the egg yolks and whites separately, if you are going to mix them again later.

    • Actually it’s not. In the video he made a meringue (egg white plus sugar), but if you don’t separate the egg yolk from the egg white, you cannot beat the egg white into that sort of cloudy, foamy texture. Folding in the meringue is what allows the cake to rise so much and become fluffy and jiggly.

  • I tried but it didn't work very well. The bottom part (equivalent to the height of the water - bain Marie) came out as a compact, pudding-like mass instead of fluffy. Only the top part was fluffy, and that broke apart as I tried to plate it. Won't be doing the recipe again.
