Quick & Easy Chocolate Cake - No eggs. No butter. One bowl.

1 1/2 cups all-purpose flour
1 cup sugar
1/4 cup unsweetened cocoa powder (preferably Dutch-processed)
1 teaspoon baking soda (not baking powder)
1/2 teaspoon salt
1 cup cool water
6 Tablespoons vegetable oil
1 Tablespoon fresh lemon juice or distilled white vinegar
1 teaspoon vanilla

  • This is the 'crazy cake' from the 70's! Been making this for years. It's awesome!

  • Can I make it with a cup of cold coffee instead of water?

    • It did not turn out well. I'd suggest not. Previous version [hers] was good.

    • I don't see why not. Coffee enhances the richness of chocolate. I have made this cake before but will try it with coffee next time. Good idea.

  • This recipe is commonly known as 'Wacky Cake', or 'Crazy Cake', as well as 'Depression Cake' because during the depression this was an affordable cake to make. No eggs, milk, or butter needed.   • My Life has changed since I found you Jenny. I'm officially Your Number One Fan I now make an Easy Chocolate Cake ever other day so I don't run out. I'm alone but that's good so no one fusses at me or sneaks my chocolate cake. Today at the grocery store I had a bit of a wake up call. First, I had to go to a box in the garage for my 'just in case bigger jeans' as I've gained a few extra pounds. As I was checking out & reviewing and bagging my purchases, I made a little discovery. Everything I purchased was directly related to your recipes.The alarming part was it didn't concern me that I had 10 lbs of Flour & 5 lbs of white sugar, powdered sugar, jam, cream cheese, cocoa for baking, lemons, butter & vanilla. I started laughing as it dawned on how very happy I was! I only wish I'd found you before the soon to be X husband & broken neck. You've given me permission to be happy. I love to cook now as I enjoy the process from shopping, making new recipe cards to the cooking & enjoying the results. I have gained some weight but I was very, very underweight as I'd been through some hard times. I'm mending with a big smile & a size bigger (only the one size though)!! Thank you so much Jenny! You've made me smile & feel good about things. Our Grandmothers were right when they said to eat & we'd feel better. I just had to tell you how thankful I am.🙏❤️

  • I just made the Easy Chocolate Cake! I didn't have lemon so I used the vinegar. It was delicious. So yummy! I'm snow bound & I had nothing here remotely interesting or sweet. I took it as a challenge & my Lord was I in for a treat. It's so good. I made the glaze which was wonderful. I've eaten 2 large pieces already. An hour ago I hadn't even started. You're a genius & the cooking guru for sure. It's a great cake and just as good as any chocolate cake I've ever eaten. Thank you so very much Jenny, you really can cook. Next time, when I have more powdered sugar I'll make your icing! I'm going to get year & make your yeast rolls. I grew up in the South & never saw this recipe. . We worked ourselves to death kneading to get the perfect rolls. I'm sorry my Nana & Mama aren't here to eat your rolls because I know they would've love them. You've changed my life. I've had a broken neck and lots of surgery and nerve damage so if I wanted yeast rolls, I need a bakery, which are always sold out at holidays, or I buy the frozen ones & thaw them out, which are expensive and not as good.   • Why don't you just sift the flour that's even easier to aerate it?

    • Aerating flour means fluffing it up and is not the same as sifting. Flour should not be sifted before measuring unless the recipe states to do so. Sifting prior to measuring will result in too little flour being used. www.jennycancook.com/flour-basics/

  • 1/2 cups flour 1 cup sugar 1/4 cup cocoa powder 1 teaspoon baking soda NOT BAKING POWDER! 1/2 teaspoon salt Wet ingredients 1 cup of cool water 6 tablespoons of oil 1 tablespoon of lemon juice NOT BULB! 1 teaspoon of vanilla extract 350 degrees set timer for 30 minutes to make sure it’s done take a toothpick of fork and poke it through Frosting 2 tablespoons of butter 1 cup of powdered sugar 1 tablespoon of cocoa powder Just add milk of water till you like the consistency Wow! Bam! Your welcome

  • I usually cut half the amount of sugar for most recipe. But for this please don’t cut as now my cake taste quite sugarless... didn’t make the frosting as I don’t have powdered sugar..going to try it again soon.

  • I made this today and it turned out so good!! It was chocolatey, moist and absolutley amazing especially since the recipe didnt call for any milk or dairy products. Basically vegan! Literally 10/10!

    • I think you could use any flavoring you have on hand if you are out of vanilla. I would if I was out of vanilla.
